Turkey Meatball recipe...sort of

I never ever ever use recipes. I sort of throw stuff together and hope for the best. This means I have a hard time sharing recipes AND it makes it tough to make the same thing exactly the same way twice. I should work on that!

Here is my best guess on the turkey meatballs...

1 lb ground turkey breast
2 spicy turkey Italian sausages with casing removed
10 crushed saltines
Couple of big spoonfuls of ricotta cheese
Two packets of ketchup (leftover from fast food!)
Big squirt of bbq sauce
Spoonful of minced garlic
salt and pepper
hot pepper flakes

Smash it all together in a bowl with your hands, really squooshing and mixing well. Cover with plastic wrap and let sit in fridge overnight. Form meatballs the next day, firmly smack them back and forth between your palms  until you have a very firm, well packed meatball. Messy but fun. Then brown off in a little olive oil. Transfer to the sauce of your choice and simmer for a few hours. Soooo good.

TIP: when making meatballs (or meatloaf), fry off a tiny bit of the meat mixture to see if it tastes right. Then adjust seasonings, etc. Much better than cooking it all and finding it to be bland or whatever.

What if I don't have ricotta? Can I substitute with cottage cheese? Also, my spoon is too big.....nevermind.
